    Cordell’s Loaded 3 Cheese Chicken Penne Pasta

    How to cook pasta//How to prepare and make pasta at home// home made pasta//

    Ingredients

    1 box of penne noodles
    2 cans of garlic roasted Alfredo sauce
    4 diced tomatoes
    Cayenne pepper and red pepper flakes to taste
    1 bag of Italian shredded cheese

    Bruschetta (12 tablespoons of olive oil , 3 of the aforementioned diced tomatoes , 2 teaspoons of garlic powder , 3 tablespoons of basil )

    3 chicken breasts cut up seasoned lightly with salt pepper and oregano. Marinate and cook in zesty Italian salad dressing

    1 lb of shrimp peeled and deveined , seasoned with any cajun seasoning I recommend essence made my emeril

    2-3 heads of broccoli seasoned with sazon and salt n pepper

    Recipe:

    Pre-heat oven to 425
    Cut the 3 Chicken breasts into quarter-sized chunks and season to taste with salt, pepper, garlic powder, and oregano. I typically use 3 teaspoons of salt , 2 teaspoons of pepper, 3 teaspoons of garlic powder and half a Tablespoon of Oregano. Marinate the chicken breasts in Zesty Italian Salad Dressing for at least 30 min (the longer the better, I try do this the night before I make the dish). Save some of the dressing.
    Put 2 Teaspoons of salt in a pot of water. Fill up the pot about halfway and bring to boil. Put 1 box of Penne Pasta after it boils and turn down to medium heat. Cook pasta for 15 minutes.
    Mix together the olive oil, 3 of the diced tomatoes, and basil. Set aside in a small bowl.
    Season the shrimp with a Lemon juice and any cajun seasoning. If using 1 bag of shrimp 1 tablespoon of cajun seasoning will suffice. I use Emeril Cajun seasoning, it’s about $3 but there are dozens of options that will work. You can substitute lemon pepper seasoning as well. Set aside shrimp is quick to cook so we will cook that last
    Put chicken and marinade in medium-heat skillet, constantly moving the chicken breasts around so one side doesn’t get too dark. Season lightly with salt, pepper, oregano while cooking, a few shakes here and there nothing to measure. After about 7 minutes put 1 cup of salad dressing in the skillet. Cook for 12-15 minutes. Chicken should be a golden brown and cooked all the way through. There will be excess juice so drain in colander or just drain the juice out in the sink before mixing with the pasta.
    After noodles are done mix the penne noodles and tomato mixture, set aside.
    In a small pot put 2 cans of garlic roasted alfredo sauce ,3 teaspoons of cayenne pepper , half a bag of italian cheese , and 1 diced tomato. Heat for 5-7 minutes or until cheese is fully melted, constantly stirring
    Fill a pot with only 1 inch of water to steam broccoli, half a table spoon of both salt and pepper and sazon. After water boils turn down to about medium and place broccoli in pot. Cover pot to properly steam.Steaming broccoli only takes 3-5 minutes maximum.
    Small skillet with lemon juice and cook seasoned shrimp stirring should only take 4-6 minutes on a Medium High heat.
    Combine Pasta (already have tomatoes in them) , Alfredo mixture , shrimp, broccoli (after draining water) , chicken breasts, and mix together in deep dish baking pan. Mix in the remaining half bag of Italian cheese. Put in oven for 7 minutes
    Enjoy, let sit for 10 minutes to cool.
